Freezing fruit as I find we either pig out on it or it goes rotten so I’m freezing it in it’s prime. Like a child I enjoy the colourful pieces and stacking them in bright containers.

 

Last night I began and finished an oil painting- that’s something I have not done since I took up oil painting at age 14. I just took an experience I had with the kittens as they were developing their cat curiosity and painted it from the memory of my heart.

 

Traveling like many do to be with family for Christmas. I started my day by finishing an oil painting. I’ve packed the mint 4 tonights lemon mint fusion drink. All packed and prepared now time to enjoy.

 

Wrapping really simple and understated this Christmas.  Brown paper bags and printed paper strip notes echoing the homemade gift inside.  No glittering ribbons or screaming red wrap.  Gifts that are hand made from the heart.  Perfect how my understated gifts sick out under the tree compared to all the commercial wrappings.  I’m enjoying this home made trend – it is more fitting with who I am.

 

For a home made Christmas gift.  Cookies with an exotic twist.  My Christmas invention this year with my family’s favourite tastes all in one cookie.

Chocolate Chili and Coconut Cookies

50ml cocoa

1/2 tsp crushed chili or chili powder

The below amounts of ingredients x2 as this requires two batches of cookie dough

250g butter

160ml caster sugar

660ml Cake flour

50 – 100ml Coconut milk

A little milk for brushing

First batch of dough

Beat butter and sugar together until fluffy.  Stir in Flour and 50ml coconut milk to form a dough that sticks.  Refrigerate for 15min.

Second Batch of dough

Beat butter and sugar together until fluffy.  Stir in Flour, cocoa and 50ml-100ml coconut milk to form a dough that sticks and does not crack. Refrigerate for 15min.

Roll out doughs separately.  Brush with milk and layer one a top another.  Cut in half.  Brush one side with milk and stack again.  brush the top with milk again and roll like a swiss roll.  Using a sharp knife cut thin disks of dough.  Place them on a greased baking sheet and bake on 180′C for 10mins or until slightly browning.

Lying down feeling faint. I draped Christmas Lights over the computer screen last night to add some christmas cheer to my bedroom. Got to pull it together and go and get all I can out of the rest of my day. Baby will be awake for another two hours. Hubby and I are out together tonight. I can sort our new little house out more and have dinner with my family. Now to go and do.

 

This mommy is sick. Stomach bug. Baby had it last week. I really struggle to see the lessons in getting ill. I can’t help any one around me which is what I think life is all about.

 

December 8th my wedding anniversary and December is moving fast.  My goal is to actively create the Christmas cheer instead of waiting for it to come to me.  So more Christmas lights need to light my windows!

We rent homes in this family as we are a young family still building up our future.  We were not planning to move again so soon but our previous place was put up for sale and our new home has come as such a blessing.  Quaint small and practical our home is now a cottage in a garden always filled with children – great for our little boy.  The fittings are all new making for easy cleaning and neat clean looks.

This Mommy is fulfilled as she now has the property’s bunny on her front porch to love and learn from.  Finally I’m allowed a pet mammal again – warm, responsive, and fluffy.
